Cuisine: ItalianTotal Time: 30 minsCategory: 30 Minutes or Less, DessertCalories: 67 per serving1. Get started: Pre-heat oven to 325 degrees. Stack two matching, rimmed baking sheets on top of one another (to prevent burning on the bottoms of cookies). Line the top one with parchment paper or a silicone baking mat.
2. Make cookie dough: In a large bowl, combine almond flour, Swerve Sweetener, and salt. Whisk together well. Set aside. In a separate bowl, beat egg whites on high with an electric mixer until soft peaks form. Add almond extract, vanilla extract, and lemon juice. Fold together until just combined. Then, fold egg white mixture into dry ingredients. Gently mix until a moist, slightly sticky dough forms. With a spoon, gather about a tablespoon of dough for each cookie. With your hands, roll the dough into 1-inch balls. Place each dough ball on the prepared baking sheet about 1 inch apart. Slightly flatten the top of each dough ball.
3. Combine and bake: Bake until cookies are lightly golden with cracks, about 20 minutes. We recommend checking for doneness after15 minutes since ovens may differ. Remove from oven and let cookies cool on baking sheet for several minutes. Then, transfer cookies to a wire rack and lightly sprinkle with Swerve Confectioners Sweetener. Let cookies continue to cool to room temperature. After, store in an airtight container for a week.

Frequently Asked Questions

What are amaretti cookies?

Amaretti cookies are an Italian gluten-free cookie made of egg whites, sugar, almond flour, and almond extract. There are two types of Amaretti cookies; the soft kinds and the hard kinds. The soft version is also known as amaretti morbidi.

Are italian amaretti biscuits keto?

Organic BAKES & MIXES. Freshly Prepared and Made to Order. Easy Sugar Free Italian Amaretti Biscuits: a mouth watering keto version. 1.5g net carbs. Hands up who loves Italian Amaretti but realises they are chock-full of sugar and therefore bad news. Well. They ARE simply yummy and addictive.

Did you know amaretti are gluten and dairy free?

Did you guys know amaretti are naturally gluten and dairy free (and aside from the sugar, naturally keto too?!). All in all, these little Italian (rather unassuming!) cookies rival even the most complex of biscuits with their incredible taste and texture.

What sweetener is best for keto amaretti?

Arguably these keto amaretti work best with erythritol sweeteners (think Lakanto and powdered Swerve ). Xylitol works best taste-wise, but it takes ( much) longer to ‘dry out’ so your amaretti will be extra delicate for about a day and the edges won’t crisp up much.
