1. First, you need to make the syrup. Combine the sugar and water in a saucepan and bring to a boil over medium heat. Stir once with a wooden spoon to help dissolve the sugar. Reduce the heat and keep simmering for 10 min.
2. Heat the oil in a separate nonstick pan over medium heat. Add the almonds and cook, stirring often, until they turn golden, about 3 min.
3. Add the butter to the nonstick pan and let it melt. Add the semolina and salt when the butter starts to sizzle. Sauté for 5 min stirring often (to prevent the semolina from burning) until the semolina has slightly browned and smells nutty.
4. Take the nonstick pan off the heat and pour the hot syrup on the semolina mixture. Mix well with a wooden spoon and cover the pan with a lid.
