Crock Pot Irish Beef Stew is a delicious twist on classic stew with a tangy broth loaded with savory meat and tender vegetables. The slow cooker does all of the work making dinner a breeze. This is such a simple stew recipe but the flavor is just really something special.
A low-and-slow stew might seem like the kind of dinner you have to babysit all day, but making a traditional lamb stew doesn’t need to be difficult. In fact, when you opt to use a slow cooker, you can get that all-day flavor with minimal hands-on time. This slow cooker Irish stew tastes like it’s straight from the Emerald Isle.
When the slow cooker is warmed, add the lamb and the onion, garlic and broth mixture-you want every bit of flavor from the skillet going into the slow cooker. Then stir in the potatoes, carrots, seasonings, Worcestershire sauce and beef broth.
In a large skillet or browning slow cooker, brown meat and saute onions in bacon grease or butter until onions are tender and meat has browned a little. Combine all ingredients into a 6-8 quart slow cooker, stirring to combine well. Cook on low for 8-10 hours, stir and serve.
