1. Place the oats, chia seeds and flour in a medium-sized bowl and stir to combine.
2. Add the cinnamon, salt and baking powder.
3. Melt the coconut oil or butter and add it along with the milk, give a couple quick stirs, and then add the maple syrup, egg and vanilla. You need to stir in between so the heat from the oil/butter doesn't start to cook the egg.
4. Refrigerate the dough for 30 minutes to firm it up.

2. Mix flour, baking soda, cinnamon, and salt in a medium bowl. Set aside.
3. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugars until creamy. Add pudding and mix until combined. Add the eggs and vanilla and beat well. Add the dry ingredients and mix until combined. Stir in the oats and chips.
4. Drop by tablespoonfuls onto your prepared baking sheets. I like to use a 2 tablespoon sized ice cream scoop for this so the cookies will all be the same size. I pressed 2-3 chips on the top of the cookies, for presentation. This is optional!
