2. Beat the butter and sugar until very light and fluffy, just like you need to do for making a Victoria Sponge. Beat in the lemon extract and vanilla extract then the eggs one at a time.
3. Fold in the flour then before it is completely mixed, mix in the milk. Work with light hands and do not over stir or it will toughen the mix.
4. Scoop into the prepared basin. If it has a lid, pop it on, if not use a disc of baking parchment then a piece of foil to cover the pudding. Scrunch the foil up under the rim of the basin and secure with string or an elastic band if needed.

2. In another medium bowl, whisk together the egg yolks, brown sugar, vanilla and salt until completely smooth. Gradually pour the hot chocolate mixture into the yolks, starting with 1 cup (so the eggs don't cook), and then adding the remaining chocolate mixture, whisking constantly to combine. (You can pause here and store this mixture for up to 2 days in the fridge.)
3. Pour the chocolate custard into a 6-by-3-inch or 7-by-3-inch ceramic ramekin and cover tightly with foil. Pour about 1 cup water into the inner pot of the pressure cooker. Set the ramekin on a steamer rack or trivet and use the handles to carefully lower it into the water, taking care not to splash any into the dish. Lock on the lid and Pressure Cook on Low Pressure (for a creamier finish) or High Pressure (for a mousse-like finish) for 18 minutes. Let the steam release naturally (about 20 minutes).
4. Open the lid and lift the ramekin out of the pot. Remove the foil, cool to room temperature and chill for 2 to 3 hours, or until ready to serve. The pudding will keep, covered and refrigerated, for up to 3 days.

4. Lock the lid in place. Select High Pressure and set the timer for 60 minutes. When beep sounds, turn off pressure cooker and use a natural pressure release to release the pressure.

It doesn’t matter if the mix isn’t totally smooth, surprisingly it still works.
4. Add the mixture to the pudding basin, it’s ok if it sinks into the chocolate spread as that’s going to make it gooey. Get a wooden skewer or something pointy but careful if your pudding basin is non-stick and draw a few swirls making sure you work in the Nutella from the bottom. Cover with the pudding basin’s lid or with baking parchment with a pleat (just in case the pudding needs room to grow).
