1. Set your Instant Pot to Saute. Add butter, onion, and yellow peppers and cook for 3-4 minutes until veggies start to soften.
2. Add garlic, ginger, spices and salt and cook for an additional 1-2 minutes.
3. Add tomatoes and coconut milk and stir well to combine. Place chicken on top of mixture. Close the lid and set to Poultry (or Manual setting for 15 minutes).
4. When cycle is complete, remove chicken and shred. Using an immersion hand blender, puree the sauce. Add the chicken back to the sauce and adjust seasoning to taste.

1. In a spice grinder or with a pestle & mortar, mix together the ginger garlic paste ingredients. Set aside.
2. In a large bowl, mix together coconut yogurt and lemon juice. Add the rest of the marinade ingredients and stir until smooth throughout. Add chicken into the marinade and mix everything very well (I used my hands). Cover the bowl and let it sit in the refrigerator for at least an hour.
3. While the chicken is marinating, prepare the sauce in the Instant Pot. Turn the pot on and press the "SAUTE" function. Let it heat up for a few minutes and add oil. Once the oil has heated up, add ginger garlic paste and sauté (adjust to "less" setting) for about 1 minute until fragrant, stirring frequently so it does not burn. Add the rest of the spices and stir.
4. Pour in the tomato sauce and coconut cream and let it cook for 7-10 minutes, stirring frequently. It can splatter a bit so I like to take a lid or splatter guard and cover the pot between stirring. Turn off the Instant Pot.

1. Stir together the ingredients for the chicken marinade in a mixing bowl, then add in the chopped chicken. Stir until all of the chicken is saturated in the marinade. Cover with plastic wrap and refrigerate at least 15 minutes (ideally 1 to 8 hours).
2. While the chicken is marinating, prepare the tikka masala sauce. To do so, start by sautéing the onion in ghee. Saute 5 to 8 minutes, until onion is translucent.
3. Add the garlic, ginger, and spices and continue sautéing another couple of minutes to open up the flavor of the spices. Add the remaining ingredients for the sauce and bring to a gentle boil. Simmer the sauce for at least 15 minutes – you can absolutely simmer for longer to achieve deeper flavor if you have the time! Use an immersion blender (or transfer to a regular blender) to blend the sauce until creamy.
4. Turn on your Instant Pot (or pressure cooker) to the Sauté function and allow it to heat up for a couple of minutes. Add the chicken, including the marinade and brown it for 3 to 4 minutes.
