1. Brown Chicken Thighs in Instant Pot: Heat up Instant Pot using "Sauté More" function. Wait until it says "HOT" (~8 mins). Add 1 tbsp (15ml) olive oil in Instant Pot (ensure oil evenly covers the whole bottom). Season one side of the chicken generously with salt & black pepper. Add chicken thighs in Instant Pot, then brown each side for 5 minutes. While one side is browning, season the other side with more salt & black pepper.
2. Saute Onion & Garlic: Set aside the browned chicken thighs. Add in sliced onions and 1 tsp (5.8g) tomato paste, then saute for two minutes. Add in a pinch of dried oregano and dried basil, then saute for another minute. Add in minced garlic cloves, then saute for another 30 seconds.
3. Deglaze Instant Pot: Pour ½ cup (125ml) unsalted stock in Instant Pot, then deglaze by scrubbing all the flavorful brown bits off the bottom with a wooden spoon. Give it a quick mix.
4. Pressure Cook Chicken and Rice: To prevent the "BURN" error, first layer browned chicken thighs and chopped carrots at the bottom. Add 1.5 tbsp (22.5ml) regular soy sauce and 2 cups (440g) Jasmine rice in Instant Pot. Pour in 1 ½ cups (375ml) unsalted chicken stock. Make sure the rice is fully submerged in the cooking liquid. Layer quartered tomatoes on top. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Pressure Cook at High Pressure 7 minutes + Natural Release 12 minutes. Turn Venting Knob to Venting Position, then open the lid carefully.

1. *UPDATE 5/17/2020: I removed this recipe after many comments of readers struggling with the burn notice--then received a ton of backlash because so many of you love this recipe and-- it works perfectly for me as well) so I am reposting it. Before cooking, PLEASE CONSULT your instant pot manual for the proper rice to liquid cooking ratio for your instant pot. I use a 1:1 ratio, but some require a 1:2 ratio, so you may want to add an additional cup of broth.
2. *Prepare all of your ingredients and have them ready. This will help prevent too much liquid from evaporating during sautéing and help you avoid a burn notice.
3. Turn Instant pot on sauté setting. Add oil. Season chicken with salt and pepper.
4. Add chicken to the hot pot and cook for a few minutes on both sides, until the skin on the chicken thighs is golden brown and crispy. Remove chicken to a plate.

1. Marinate Chicken Thighs: Rinse the thighs and pat them dry with kitchen tissues. Now, add all the seasonings mentioned above in the "Seasonings for chicken thighs" section, whisk them to mix. Than gently rub the chicken thighs with this dry rub. Make sure that the thighs are well coated with the rub. Marinate the chicken either over night in the fridge or for at least 30 mins.
2. Sear marinated chicken: Now, set the Instant Pot on SAUTE function & set it on HIGH heat. Add butter & olive oil, when they become hot enough gently release the marinate chicken thighs skin side down and sear them until golden brown both sides. Set them aside. Discard the excess fat. There'll be lots of brown bits stuck at the bottom of the pot, don't worry we'll de-glaze them later & they'll add so much more flavor.
3. Saute aromatics & veggies: Now, add the onion, garlic, carrots & bell peppers and saute for 2-3 mins. Add salt to quicken the process. While sautéing you'll notice that the brown bits stuck at the bottom of the pot will be loosening. CANCEL the SAUTE function.
4. Prep white rice: Now, rinse the white Basmati rice very well until clear water runs through. Drain well with the help of a colander, so that there's no excess water remaining. Add the rinsed rice to the pot.
