This Instant Pot Chicken Fried Rice is a healthy, delicious one pot rice idea with no clean up - it uses frozen veggies for a faster cook time too! Add oil, butter, onion, chicken, garlic, soy sauce, chicken broth and rice to Instant Pot in that order. Place lid on Instant Pot and make sure valve is set to seal.
Press Sauté on the Instant Pot and add the vegetable oil. When the oil gets hot, add the chicken and onion. Season with salt and pepper and sauté for 6-10 minutes, until the chicken is fully cooked. Add the garlic and sauté for 30 seconds. Stir in the peas and carrots and cook for another 2 minutes.
