Remove the vada batter 1 hour before frying to bring it back to room temperature.

How to make crispy vada?

These vada are crispy on the inside and airy inside. In a mixing bowl, combine the flour, onion, curry leaves, green chilies (if using) and salt. Add about ½~¾ cup of water to make a very thick paste like batter. Add water very slowly, so that you won't end up with watery batter. Cover the bowl and set aside for 2~3 hours.

What to serve with medu vadai?

These medu vadai is so crispy on the outside but wicked fluffy in the centre. Dipping this in chutney and sambar is heavenly. I love it with hot idli, sambar and chutney.
