Instant Pot Green Lentil Soup is a hearty, yet full-of-flavor lentil soup made with green lentils, carrots, celery, red bell pepper, coconut milk and indian spices. Firstly Wash and rinse the lentil, keep aside—Press SAUTE on Instant Pot. Add oil and once it’s hot, add minced garlic and saute for 30 seconds.
As I just said, making a keto lentil soup is easy, especially compared to some soups out there. In my recipe, I used red lentils which have the same nutritional value as other lentils. You do not need to soak or pre-cook the lentls before starting. Start by setting up your soup pot, and adding the onions and vegetable oil to the pot.
Combine the lentils, 2 boxes of chicken stock and turmeric in a heavy pot and bring to a boil. Cover, leaving the lid slightly ajar, turn heat to low and simmer for 30 minutes. While soup simmers, peel potatoes and cut into 1/2-inch cubes. When soup has cooked for 30 minutes, add cut potato.
Plus point: the soup is vegan. This particular Indian lentil soup is a variation of my Goan masoor dal curry. The difference is the number of spices used and the quantity.
