In your blender/food processor container, soak the coconut with hot water while you gather other ingredients. Roughly chop the cilantro, garlic, jalapeño, mint leaves, and add another 1/4 cup water. Blend at low speed and tamp down from time to time.
In northern India, chutneys are an intregral part of Chaat, which refers to popular Indian street food dishes, including samosa, dahi vada and pakora, just to name a few. They also make for a great spread for popular wraps and sandwiches, like Paneer Frankie, Chicken Kathi Roll and Bombay Toast.
If you want to store green chutney for a long time, you can also freeze it. Just store it inside an airtight freezer-safe container – it’ll keep for around six months. Thaw the chutney overnight in the fridge and use as you see fit.
