1. In a large mixing bowl, combine the almond flour, instant potato, baking powder, xanthan gum, and salt. Then, mix the whole egg into the dry mix. Set this aside.
2. In a small pot over low heat, combine the cream cheese and mozzarella. Continually stir these ingredients together as they melt to avoid burning. Once both cheeses have fully melted and combined, set the pot aside to cool for just about 30 seconds.
3. Stir the melted cheeses into the dry mix from Step 1. Stir and fold until you have a consistent bread dough. It will be very sticky.
4. Spread the sticky dough into a piece of plastic wrap. Use the plastic to shape the dough into a flat square or disc. Wrap the dough in chill in your fridge for at least 3 hours. You can also chill the dough overnight.
