If you’re cooking your prime rib at a higher temperature, like 325°F, you’ll need to decrease the cooking time. For a 3-bone roast, you should cook it for approximately 2½ hours. For a 4-bone roast, cook time will be closer to 3½ hours. And for a 5-bone roast, you should plan on cooking for approximately 4½ hours.
The optimal cooking temperature for a 6-bone prime rib is still 325°. However, this size prime rib will take a much longer time to cook. You don’t want to increase the temperature simply because there is more meat, which will cause the fat to seize up and become tough, chewy, and hard to slice.
For this method of low-temperature cooking, allow about 40 to 50 minutes per pound for your roast to reach medium-rare. The lower your temperature and the thicker the roast, the more time per pound you should allow. Most recipes call for searing the roast first and then finishing it at low temperature.
