We do a citrus honey wheat. It is a belgian wheat ale and we have added honey at different points. We have have good results adding it when we keg . We have taken a cup of the wort and added 1/2 cup of the Orange Blossom Honey and heated it to about 100 deg so the honey would mix with the beer. then add it into the keg and carbonate. I like the

Without an additive to dry the beer, it will be about 45-55 percent carbs. It's obviously possible to brew a light beer by starting with an OG in the 1.030's, but to get it low carb, I would suggest adding a pound of honey or another 100% fermentable sugar. Add extracts and honey, bring to boil. Boil 10 minutes before adding hops. Boil, following hop schedule above. Cool wort to 75° F with a wort chiller. American wheat beers use a neutral yeast that doesn’t give the banana or clove flavors.
