1. Preheat oven to 325 F or 170 C.
2. In a small saucepan, add the honey, butter, 1 teaspoon ground cinnamon and on a medium heat, stir until melted. Once it starts to bubble, keep stirring for about 2 minutes.
3. Put the nuts in a large mixing bowl and add the honey mixture, stirring so everything is combined and the nuts are nicely coated.
4. Pour the nuts onto 2 large baking sheets. line them with parchment paper to avoid any sticking. Make sure you spread the nuts out as much as you can so they all get an even browning in the oven. Place in the oven for 20 minutes.
