Preheat oven to 350 degrees and line a baking sheet with tin foil. Measure out all ingredients and combine the honey, maple syrup and butter. Microwave until butter is melted, about 25-30 seconds. Then add salt, vanilla and cinnamon to the honey mixture and stir. Place cashews in a medium-sized bowl, pour the honey mixture over the nuts and toss.
Melt butter in microwave in microwave safe dish and stir in measured honey. You can melt in small bursts to avoid burning your butter. Pour cashews into a large mixing bowl. You are going to stir them around so have enough room. Pour butter honey mixture over cashews and gently toss to coat all pieces.
When completely cool, your honey roasted cashews are ready to enjoy. Store them in an air-tight container on the counter for 4-5 days. If they last that long. *When you remove the hot cashews from the oven they will appear soft but they harden as they cool.
