    1. Peel and cut carrots to relatively the same size. Boil until tender, about 15 minutes. You can also slightly under cook them if you prefer more of a “bite, chew” to your carrot.
    2. While carrots are boiling, mix all the dry ingredients together until well combined and remove any lumps. It mixes much easier than adding one at a time to pan.
    3. When carrots are tender, drain the carrots in strainer and let sit for a moment. Return empty pan to stove and add butter. When butter has melted, add dry ingredients, 2 Tbsp of water and stir together till “wet”.
    4. Immediately add in the drained carrots and stir so they are all well coated in the glaze.

    1. Turn your oven on to 425 degrees.
    2. Melt the butter in a large ovenproof skillet (see notes) over medium-high heat. Add the honey, salt, pepper, and cayenne and bring to a boil for 2 minutes. Add the carrots and toss to coat in the sauce.
    3. Place the carrots in the oven and cook for 20 minutes. If you’d like some dark spots on your carrots, broil for the last 2-3 minutes. Be careful as they burn quickly.
    4. Remove the pan from the oven and continue to cook the carrots for 2 minutes over medium-high heat on your stovetop to caramelize the honey. Once the sauce just barely starts to darken, remove the pan from the heat.
