DirectionsStep1Rinse the lemons then peel off and discard the rind. Roughly cut the fresh lemon into quarters, and add to a blender. Rinse, peel, and cut the ginger root into 1" pieces and add to the blender.Step2Add about 1 cup of water, or enough to blend the lemons and ginger until smooth. Add a little extra water as needed until the mixture has a smoothie consistency.Step3Place a fine mesh strainer over a large bowl and squeeze to strain off as much juice as possible. Discard the pulp and continue straining until you have captured all of the juice.Step4Pour the lemon ginger juice into ice cube tray molds and freeze. Once frozen, transfer the frozen cubes to freezer bags.Step5When you're ready to make tea, place 8-12 ounces of boiling hot water in a mug along with about 1 teaspoon of honey. Add 1-2 lemon ginger ice cubes and stir until the cubes are melted.
