These Homemade Savoiardi or also know as Lady Fingers, are a delicate Italian cookie. Most often used in recipes such as Tiramisu or Charlotte. Pre-heat oven to 375F (190C). Line 1-2 cookie sheets with parchment paper. In a medium bowl sift together the flour, corn starch, baking powder and salt. Set aside.
Like any traditional Italian recipe, there are different versions. Some make lady fingers with flour, others with a mixture of flour and potato starch (as in this recipe), which makes them softer. The use of flavorings, such as lemon, vanilla or liqueur, is subjective and entirely optional.
These keto ladyfingers - or savoiardi - are a fantastic low carb version of the traditional cookie. Enjoy them as they are, or use them to make my Keto Tiramisu! A few weeks ago, I was craving Tiramisu.
Among the local Italian pastry traditions, one of the best known versions of Savoiardi is the Sardinian one. In Sardinian Dialect, Lady fingers cookies are called “Pistoccus” or “Pistokkus” or “Pistokkeddus”. They call them also Savoiardi di Fonni, from the town that is best known for this recipe.
