This is iyengar sambar powder recipe. It is a flavourful blend of lentils and Indian spices. It is the main ingredient used to bring flavours to a lentil rich gravy called Sambar. It is thicker than a traditional rasam because of the use of channa dal in the powder.
Fresh, aromatic, homemade sambar masala powder made with roasted spices. Heat a pan and then add 1/2 cup coriander seeds and 2 tbsp cumin seeds. On a low flame, stir and roast the coriander and cumin, till they become fragrant and change color. It just takes 1 to 2 minutes in a low flame to roast these. They should smell aromatic.
Coriander / Dhaniya: Coriander seeds is another key ingredient in Sambar Powder. Coriander seeds have a great flavour when crushed and thus the sharp differentiating taste of Sambar Powder. Fenugreek / Methi: Fenugreek seeds gives aroma & nutty, slightly bitter taste to Sambar Powder.
This recipe needs ½ tablespoon of turmeric approximately. Though named as sambar podi, we call it usually molaga thool (curry powder if I want to sound familiar). Unlike the bulk version, this may be more flavorful and strong. Gets thick sooner. So use it like a fusion between bulk sambar powder and the arachuvitta sambar masala.
