It should be no surprise that my #1 favorite low carb candy recipe was for peanut butter chocolate squares. I’m a HUGE fan of peanut butter. In fact, I updated that recipe into actual sugar free peanut butter cups.
Though a lot of recipes don’t call for a specific temperature, the two times I’ve tried making honeycomb without a thermometer, the candy had a slightly burned taste to it, because the sugar cooks more after you add the baking soda. Thermometers aren’t very expensive and are totally worth having, so you can nail temperature-sensitive recipes.
Stir chocolate occasionally with a wooden spoon until smooth and dissolved. Remove the chocolate pan from heat. Using two forks or a pair of tongs, dip the pieces of honeycomb into the chocolate. Transfer the dipped pieces on prepared tray after allowing excess chocolate to drip back into the bowl.
