1. Pour juice into a small-medium saucepan. Sprinkle the gelatin over the top and let sit for just a few minutes until it starts to “bloom” (it will get wrinkly looking on the surface and all of the white powder from the gelatin will absorb into the liquid). When all the gelatin is absorbed, mix it well.
2. Then place the saucepan over medium heat on the stove. Let the liquid warm, but don’t let it boil. You want all of the gelatin to dissolve and turn thin and runny (it will be grainy at the beginning but after a couple of minutes in the heat it should dissolve completely).Add the honey, vanilla extract, and any other ingredients you will be using.
3. Put the liquid in a little jar (I use my measuring cup) into a Loaf Pan or your fun gummy molds and refrigerate for about 2-3 hours. Some of my favorite molds are the Freshware 30-Cavity Silicone Mold, the Toy, Car, Block and Bear Chocolate, Gummy Mold and the kilofly Silicone Mold, Robot & Dinosaur
4. Remove from molds. They pop right out. If you used the loaf pan, cut your gelatin into small squares.

5. Begin by placing your silicone molds on a baking tray, to make it easier to transport them into the fridge. Also make sure you a flat area in your fridge to place the gummy bears once they're poured in the molds.
6. Make each flavor separately.
7. Bring 1/3 cup fruit juice, 2 Tbsp of honey and 2 tsp of either stevia sweetener or granulated sugar to a boil over a medium high heat in a small saucepan or pot.
8. Set aside to cool for 3 minutes. It should still be warm enough to melt the gelatin, but not hot enough to weaken the setting power of the gelatin.

1. Mix together 1 cup of the juice (or other liquid) with the 5 Tbsp. of gelatin and allow the gelatin to rest for several minutes. This will allow the gelatin to "bloom," meaning that it will absorb the liquid and expand. This will make it much easier to dissolve the gelatin later.
2. Begin warming the other half of the juice in a small saucepan over the stove.
3. Stir the hydrated gelatin mixture into the saucepan with the rest of the juice, and stir the mixture over low heat until the gelatin fully dissolves.
4. Pour the gelatin mixture into your candy molds. Using a syringe or dropper makes the job easier and less messy, but you can also carefully pour or spoon the mixture into the molds.
