It should be no surprise that my #1 favorite low carb candy recipe was for peanut butter chocolate squares. I’m a HUGE fan of peanut butter. In fact, I updated that recipe into actual sugar free peanut butter cups.
Melt the cocoa and baking chocolate. To make your low carb chocolate, melt together the cocoa butter and baking chocolate in the double boiler. Ehisk in the powdered erythritol a little at a time, then whisk in the inulin gradually. The trick here is to whisk a lot and try to get them to mix in without clumping.
Finding sugar-free candies and low-carb desserts to satisfy that craving is not always easy. That’s why I like making my own low-carb and sugar-free candy! This way I can control what kinds of ingredients and sweeteners are used. Many people, myself included, prefer certain sweeteners because of the way that they taste.
Brown the butter, add the heavy cream, erythritol, and Sukrin fiber syrup and simmer/boil for 20 minutes for a softer stickier caramel candy, and 30 minutes for a firmer caramel candy. Don’t skip the fiber syrup. I believe it helps discourage the erythritol from re-crystallizing.
