Wash the pickles and cut the stems off if you keep them whole. Stir the vinegar, water, and salt in large pot; let it just come to a boil. Have hot jars ready: Put in 1 clove garlic, 1 T pickling spice, several sprigs of dill, 1 T dill seed and 1 pinch alum (if you did not use lime).
These low-carb pickles will keep in the refrigerator for up to two months as long as they stay covered. Try this homemade pickle recipe instead of the sodium-packed pickles from the grocery store. Combine vinegar, peppercorns, coriander seeds, dill, Stevia, salt, and pepper flakes (optional) in a medium saucepan over high heat. Bring to a boil.
Then, place the cucumber slices in a 12 oz glass canning jar. In a small pot, combine all the other remaining ingredients. Cover and bring the liquids to a strong simmer. Cook until the stevia and salt have dissolved. Pour the hot pickling liquid over the cucumbers in the jar.
Many recipes for canned pickles call for this, but unless you have dill growing in your garden, they can be difficult to source. Since I don’t have fresh dill plants growing in my garden, I am using the dried dill seed to give that bright flavor to these canned pickles. It’s easier to find and stores great in the pantry.
