1. Preheat the oven to 350°F and lightly spray a 9x13-inch baking dish with nonstick cooking spray.
2. In a large bowl, cut the shortening into the flour using a pastry blender or two forks. The goal is to get the shortening cut into tiny pea-size pieces.
3. Add the water and stir until combined. Use your hands to gently knead the dough until it holds together.
4. Turn the dough out onto a lightly floured surface and roll the dough into a thin rectangle that is about 10x16-inches. Spread the soft butter to cover the dough then sprinkle with the sugar and nutmeg (or cinnamon). Carefully and tightly roll the dough up jelly roll style and pinch to seal the long edge. Cut the dough into 12 even rolls and place them into the prepared dish.

1. Pour warm milk (110-115 degrees F) into the bowl of stand mixer. Add sugar and yeast. Stir, and let it stand for about 10 minutes until frothy.
2. Set up the dough hook attachment in the stand mixer. With the mixer on low speed, mix the eggs, 1/4 cup melted and cooled unsalted butter, honey, and salt. Increase to medium speed, and add flour 3 cups flour, 1 cup at a time. Add the remaining flour in 1/4 cup increments as needed, until a dough has formed. If it’s sticking to the bowl too much, continue adding flour in ¼ cup increments. I ended up using 3 1/2 cups. The dough should be slightly sticky, moist, and manageable.
3. Transfer to a floured surface and knead by hand about 4 minutes, sprinkling more flour as necessary. The dough should be moist, slightly sticky, and should spring back slowly when poked. Do not over-knead or the bread will be tough.
4. Form into a ball and place on a lightly oiled bowl (olive oil is fine), making sure to coat the dough with some of the oil. Cover with plastic wrap and let it rise in a warm environment for about 1 hour, until doubled in size.

1. Add warm milk to the bowl of a stand mixer. Add granulated sugar whisk and yeast. Whisk gently to combine. Let the mixture sit for 5-10 minutes, until the yeast starts to foam and/or bubble.
2. Add the honey, salt and egg and mix gently to combine.
3. Add the flour. Use the paddle attachment to mix on low speed until the flour is mostly incorporated. Add the butter cubes and continue mixing on low speed until the butter is incorporated.
4. Switch to the dough hook and knead the dough on low speed until it is smooth and slightly sticky to the touch, about 8 minutes. The dough is supposed to be slightly sticky, but if it is very sticky you can add a little more flour, 1 tablespoon at a time. Avoid adding too much flour, because this will make the rolls more dense instead of light and fluffy. The dough should stick to your finger a little bit when you touch it but not be so sticky that it won't be workable.
