1. In a medium saucepan add the corn syrup, marshmallows, and salt and cook over medium heat, stirring constantly, until the marshmallows are melted. Stir for about a minute longer.
2. Remove from heat and stir in coconut and vanilla. Transfer to a bowl, cover and refrigerate for at least 1 hour, or until well cooled. (This part could be made days in advance).
3. Line a baking sheet with parchment paper. Remove coconut mixture from the fridge and scoop into small logs, about the size of a fat tootsie roll, (or double that size if you want them bigger, to fit 2 almonds on top) and place on parchment. Press a whole almond on top of each.
4. Place the pan in the fridge or freezer while you melt the chocolate. (The colder the rolled coconut mounds are, the easier they will be to work with).

2. Process until sticky and clumps together, taking time to scrape down the sides to get everything processed together.
3. Place a piece of parchment paper on a cutting board.
4. Use your hands to form oval shapes and place on the parchment paper.

1. In a large bowl, mix shredded coconut, condensed milk, and vanilla. The mixture will be sticky but pliable for you to shape.
2. In a double broiler (a bowl over a pan filled with water), melt the chocolate. If you choose to use the microwave to melt your chocolate, it will take 1-2 minutes but make sure you stir every 15-30 seconds so the chocolate doesn’t burn.
3. Line a mini cupcake pan with liners (I find it easier this way so they hold up). Add a teaspoon or so of melted chocolate into the bottom of each cup – enough to fill the bottom. Top with a teaspoon of coconut mixture and press down lightly using your spoon. Top the coconut with an almond, press down to sink into the coconut slightly, and top with more melted chocolate (enough to cover).
4. Repeat process until all almond joy bites are made. Refrigerate to set and enjoy!
