2. Cook gently, stirring often to prevent sticking. You may have to turn the heat down because you don't want the vegetables to brown. The vegetables should turn a golden straw color. It can take up to 45 minutes.
3. When the vegetables are a golden wheat color, the soffritto is ready. You can refrigerate or freeze it until needed.
4. Keeps a week in the refrigerator or 6 months in the freezer.
