1. Beat butter, sugar, egg and vanilla in large bowl until well blended. Stir together flour, cocoa, baking soda and salt. Add alternately with milk, beating until well blended. Cover; refrigerate dough about 1 hour or until firm enough to handle. Remove wrappers from chocolates; set aside.
2. Heat oven to 375° F. Shape dough into 36 equal (about 1 inch) balls. Roll in chocolate sprinkles; place on ungreased cookie sheet.
3. Bake 8 to 10 minutes or until set. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely. Spread frosting onto cookies, leaving about 1/2 inch around outer edge unfrosted. Place chocolate in center of each cookie.

1. Mix dry ingredients: Sift the cocoa powder(s) into a medium mixing bowl. Add the flour, cornstarch, coffee granules (if using), baking soda and salt. Whisk until combined. Set aside.
2. Cream butter + sugars: In a large bowl using a hand-held mixer or a stand mixer fitted with the paddle attachment, beat the butter with both sugars on medium speed until well-creamed and paler in color, about 3-4 minutes, scraping down sides of bowl as needed.
3. Add eggs + vanilla: Add in the egg, egg yolk and vanilla extract. Beat on medium-high speed until incorporated and fluffy, about 1-2 minutes. Scrape down the sides and the bottom of the bowl.
4. Add dry ingredients to mixer: With the mixer on LOW speed, slowly pour the dry ingredients into the wet ingredients. Mix on low until JUST COMBINED. The cookie dough should be THICK. (NOTE: If you are using a handheld mixer, add ½ the dry ingredients and mix for 10 seconds before adding the other ½ of the dry ingredients.)
