In my home, Hello Dolly bars have been a Christmas tradition for as long as I can remember. These cookie bars are also known as seven layer bars or magic bars. Whatever they are called, they are deliciously made with butterscotch chips, chocolate chips, pecans, graham crackers, coconut, and sweetened condensed milk.
The first thing you need to do to make low carb magic cookie bars is to come up with a good keto crust to replace the normal graham cracker crust. Not too hard actually, now that nut flours are so popular and versatile. In a small bowl mix together almond flour, egg, salt, sweetener, and melted butter.
Though the original recipe was called Hello Dolly Cookies, there was another name sometimes used which was called “Magic Cookie Bar.“ The name was different, but the recipe was the same. What makes this cookie an original is that the original recipe calls for graham cracker crumbs, semi-sweet chocolate, coconut, pecans and sweetened condensed milk.
The carb laden version starts with a cookie crust and then just piles on sugar after layer of sugar. My Keto Hello Dolly bars are made up of just the important stuff. I like to think of the crust as just a base anyway. It’s not necessary, so I axed the crust. We don’t even miss it! In my recipe for Keto Magic Bars there are many steps.
