This easy Manhattan clam chowder recipe is low carb version allowing a hearty portion size. This chowder recipe from the New York Times was my inspiration. Be sure to select canned clams without any added sugar such as Bumble Bee Brand.
Normally, New England clam chowders have clams, celery, onions, flour, cream and potatoes. Some recipes also call for salted pork. To replace the flour, we use arrowroot powder which is a keto friendly thickener for soup. To replace the potatoes, we use daikon radish, but you can omit that all together too.
Whisk in chicken broth. Add clams & clam juice, heavy cream, daikon radish and seasonings. If you use the optional daikon radish (1/2 cup) , add 1.5 net carbs to the recipe! Bring to boil, reduce to simmer and cook for 15 minutes. Remove from heat. Serve with chopped bacon on top. Instant Pot Instructions: Pressure on "High" for 5 minutes.
