Whisk the wet ingredients together. Scatter the cinnamon, baking powder, baking soda, and salt over the top. Add the zucchini and most of the flour. Stir the blueberries and remaining flour together. This will keep them from falling to the bottom of the bread. Stir the blueberries into the batter. Pour the batter into the loaf pan.
If you don’t have fresh lemons, bottled lemon juice works, too. Wholesome Yum Almond Flour – Highly recommend using this one, because it has the finest consistency and is blanched, for the best texture in your low carb zucchini bread. If you’re allergic to almonds, you could try sunflower seed meal as a substitute.
