Servings: 30Calories: 179 per servingTotal Time: 1 hr 5 mins1. Preheat oven to 350°F with racks in top third and middle positions. Line 2 large rimmed baking sheets with parchment paper. Stir oats, flour, baking soda, cinnamon and salt together in a medium bowl.
2. Beat butter, peanut butter, brown sugar and granulated sugar in the bowl of a stand mixer fitted with a paddle attachment on medium-high speed until fluffy, about 3 minutes. Beat in egg and vanilla until just combined, about 15 seconds, stopping to scrape down the sides of the bowl as needed. With the mixer on medium-low speed, gradually add the oat mixture, beating just until combined, about 20 seconds. Fold in cranberries, peanuts, chocolate chips and pepitas until combined.
3. Drop 2-tablespoon portions of the dough at least 1 1/2 inches apart on the prepared baking sheets; flatten slightly with your fingers or the bottom of a glass to form 3/4-inch-thick (about 2-inch-round) disks. Bake until very lightly browned around the edges, 10 to 14 minutes, rotating the pans between top and bottom racks halfway through. Let cool on the pans until set, about 2 minutes. Transfer to a wire rack to cool completely, about 30 minutes.

Rating: 4.6/5(81)
Servings: 12Estimated Reading Time: 6 mins1. Place racks in upper and lower thirds of oven; preheat to 350°. Toast nuts and seeds and oats on a rimmed baking sheet, tossing once, until golden brown, 10–12 minutes. Transfer to a medium bowl; let cool.
2. Meanwhile, mix egg, butter, brown sugar, granulated sugar, vanilla, salt, and baking soda in a large bowl; let sit until nuts are cool (this will make for a chewier cookie).
3. Add dried fruit and chocolate to nut mixture; toss to combine. Give egg mixture a good stir, then stir in flour. Mix in nut mixture, smashing it against the sides of the bowl with a rubber spatula, until combined and mix-ins are evenly coated in dough. (It will look like too many mix-ins, but dough will come together as it chills.) Cover and chill at least 2 hours and up to 3 days.
4. Reheat oven to 350°. Using a ⅓-cup measure or #16 cookie scoop, portion out dough, packing firmly, to make 12 cookies. Divide between 2 parchment-lined baking sheets as you go. Using measuring cup or your hand, press cookies into 2½"-diameter disks about ¾" thick; sprinkle with sea salt.
