1. Preheat oven to 350 degrees F.
2. Chop pears, removing the stem and core, then place in a large mixing bowl. Add remaining filling ingredients and mix until the pears are well coated. Pour the filling into an 8" x 8" baking pan.
3. Combine the almond flour, tapioca flour, flaked coconut, cinnamon and salt in a large mixing bowl. Add in the shortening and maple syrup. Mix with a fork, then use your hands. Once the dough is barely mixed together (still slightly crumbly), use your hands to crumble the topping over the filling. Gently press down with your hands.
4. Place the crumble in the oven and bake at 350 degrees F for 35 minutes.

Cover the bowl with plastic wrap and place it in the fridge until ready to use.
3. To make the filling: place pears, maple syrup, cinnamon, vanilla and arrowroot starch in a large bowl and toss to combine. Take 1/3 cup of the topping mixture and toss with the pear mixture. Place the pear mixture in a prepared pan and sprinkle evenly with the remaining topping.
4. Bake the crisp on a baking sheet (just in case the filling bubbles over!) for 45 minutes-1 hour, or until topping is golden brown and filling is bubbling. Remove from the oven and cool for 10 minutes on a wire rack. Serve warm with your favorite vanilla ice cream or yogurt on top. Makes 9 servings.
