3. Reduce heat to low, cover and simmer for 20 – 25 minutes, stirring occasionally. Remove pot from the heat. Let the chili rest for 5 minutes before serving. Sprinkle with chopped cilantro if using.
4. Serve with shredded cheddar and sour cream if desired.
