Be careful not to get the heat too high to avoid burning the chocolate.
4. While the crust is cooling, make the chocolate layer. Beat the heavy cream, powdered sweetener, and vanilla until stiff peaks form. Beat in cocoa powder gradually.

Once it heats up, whisk constantly until thickened and pudding-like (total, it takes me ~12-13 minutes). DO NOT overcook! When I took my mixture off the stove, I stuck a thermometer in it and its temperature was 140 degrees Fahrenheit.
2. Whisk in the vanilla paste and stevia extract.
3. Strain the mixture through a fine mesh sieve into a heat-proof bowl and let cool to room temperature. Cover and refrigerate overnight. Serve and enjoy!
