Mix the batter according to the recipe instructions then pour it over the berries. Bake the low carb clafoutis at 350°F for 45-50 minutes or until a toothpick comes out clean. If you use frozen blueberries, add an additional 10-15 minutes to the baking time. When you remove the clafoutis from the oven, it will deflate.
This keto clafoutis is made with blackberries. You can, of course, customize the flavors, but I love the tartness of fresh blackberry, paired with the sweetness of the gluten free clafoutis batter. It goes great with sugar free vanilla ice cream, or even my Strawberry Cheesecake Keto Ice Cream. How is traditional clafoutis made?
You can eat this sugar free clafoutis cold topped with some delicious keto yogurt or sugar free whipped cream and more berries if you like. Typically it is a dessert that is served lukewarm. You could make this ahead of guests coming over and leave out of the oven on the counter for about 15-20 minutes to cool slightly.
Clafoutis is traditionally made with cherries, but we're making it with raspberries instead for a lower carb option. What does it taste like? Imagine a baked, custardy, fruit-filled cake with a little jiggle in the middle. It's gluten-free and easy to make, with only 4 grams of net carbs per serving. Send over a slice!
