1. In a high-speed blender, food processor or mixing bowl, combine all your ingredients and blend/mix until a thick dough remains. If it is too thick, add extra liquid of choice.
2. Pour the dough into a large mixing bowl. Lightly wet your hands and form small balls. Place the balls on a plate and freeze.
3. While the chocolate coconut balls are firming up, prepare your chocolate of choice by melting it. Moving quickly, remove the coconut balls and dip each one in the chocolate until evenly coated. Repeat until all the balls are covered in chocolate and refrigerate until firm.

1. If using homemade shredded coconut, then you can find out how to make it on my blog. Alternatively, use unsweetened desiccated coconut and begin by mixing the coconut with the condensed coconut milk until thoroughly combined.
2. Form this mixture into coconut balls and leave to chill in the fridge (use my images for size reference).
3. Meanwhile, melt the dark chocolate and dip each coconut ball into it. You can use whatever method you prefer. However, I like to use wooden skewers to dip the balls into the chocolate and then leave to dry on a wire cooling rack. Leave a piece of baking paper underneath to catch any chocolate drippings.
4. Chill once more and enjoy!

1. Take a small saucepan and heat heavy cream to almost a simmer, but do not boil. Whisk in the powdered sweetener and then the coconut. Turn off the heat, stir in the extract, and let it sit for 15 minutes so the coconut can absorb the liquid.
2. Form coconut mixture into tablespoon-sized balls and place on a baking pan. Place in freezer for 2 hours or overnight.
3. To make the chocolate coating, put 5 oz of chopped unsweetened chocolate, cocoa butter, and powdered sweetener in a double boiler or bowl over a saucepan of boiling water. Stir constantly until completely melted and mixed together.
4. Remove the coconut balls from the freezer. Place one on a fork and dip it in the chocolate mixture to coat thoroughly. Shake the excess chocolate back in the bowl and place the coated coconut ball on the baking tray to set. Repeat with all coconut balls.
