2. Saute the onions and garlic in the oil in a soup pot for 5 minutes on medium heat. Do not let it brown.
3. Drain the lentils and add them along with the diced potato and carrots and tomato puree. Add coriander powder, cumin, turmeric, pepper and salt and 3 cups of water.
4. Bring the soup to a boil, then simmer for 30 minutes. Add spinach and simmer for another 15 minutes or until the lentils become soft. If you want the lentils very soft and mushy, cook for another 10 minutes.
