1. Preheat oven to 350 degrees F. Spread the hazelnuts on a baking sheet in a single layer. Roast for 12 minutes, rotating the pan halfway through.
2. Remove the hazelnuts from the oven and let cool for a couple of minutes.
3. Add the still warm hazelnuts to your food processor. Process on high until the nuts turn into loose, fairly liquid butter, about 10 minutes, stopping to scrape the sides and bottom of the food processor bowl a few times during this process.
4. Add the remaining ingredients to the food processor. Process on low for a few seconds, then process on high until very smooth, about 3 more minutes, scraping the sides and bottom twice.

1. Place the chocolate pieces in a bowl and heat up in the microwave until almost completely melted. Stir until smooth.
2. Place the hazelnuts in a blender and blitz until the mixture thickens but is not silky smooth. If you are using a high speed blender do this on a very low speed (it should take only about a minute).
3. Add the melted chocolate, cocoa and powdered sugar into the blender and whizz briefly just to combine.
4. Transfer the spread into a jar and chill before using. If you keep it in the fridge too long and the spread solidifies simply microwave it for a few seconds and give a good stir to loosen the consistency.
