1. In a medium saucepan, combine milk, sugar, and coconut milk. Heat to a boil. Meanwhile, combine cornstarch and water and whisk to fully combine. Once coconut milk is boiling, reduce to a simmer and whisk in cornstarch slurry. Continue to stir over low heat until mixture is thickened, to the consistency of pudding.
2. Melt chocolate chips in a glass bowl in the microwave (make sure to stir occasionally so it doesn't burn). Divide coconut mixture evenly into two bowls and stir chocolate in to one.
3. Spread chocolate mixture onto the bottoms of pie shells and smooth out. Top with coconut mixture and smooth out. Refrigerate until cool. Before serving, whip the cream with sugar and layer on the pies. Optional: garnish with chocolate shavings.

2. In food processor, pulse cold cubed butter and flour. Add water one tablespoon at a time to dough. Add macadamias. Dough should be crumbly but able to pinch together. Pour onto plastic wrap. Form a disk. Cover with plastic wrap and refrigerate for 20 minutes to 1 hour. Remove. Preheat oven to 350 ℉. Roll dough out on a floured surface. Avoid dough becoming too warm by overworking with hands. Carefully press dough into 8" pie dish. Place crust into oven and bake until golden brown-approximately 15 mins at 350℉.
3. Set aside to cool completely.
4. While the crust is cooling, create a slurry by dissolving cornstarch into water. Set aside.
