1. De-stem chile peppers and soak dried chile peppers in pot of water that has just been turned off after being brought to a boil. Soak for 20-30 minutes to hydrate.
2. Toast spices 2-3 minutes in small, dry pan over medium heat, until aromatic. Let cool before grinding.
3. Grind spices and salt together in coffee bean grinder to fine grind.
4. Drain peppers, reserving chile water, and add all ingredients to blender or food processor. Process until smooth, thinning with chile water if necessary.

1. Preheat the oven to 425°F. On a large baking sheet, spread the cut veggies in an even layer, then drizzle with 2 tablespoons of olive oil (or avocado oil). Use your hands to spread it around so the veggies are evenly coated.
2. Nestle each chicken piece into the veggies and drizzle the remaining 1 tablespoon of oil onto the chicken. Use your hands again to spread it around.
3. Squeeze half of a lemon over the sheet pan. Sprinkle on the salt and pepper, then dust the entire tray with a generous amount of harissa seasoning. Use your hands to gently toss the veggies in the seasoning and evenly coat the chicken.
4. Arrange the lemon slices on top of the chicken and veggies. Transfer the sheet pan to the oven and bake at 425°F for 35-40 minutes or until the chicken is done. Remove from oven and allow it to rest for at least 5 minutes before serving.

1. Preheat oven to 400 degrees F. Rinse chickpeas and let them drain. Pat dry with paper towels. Wrap the chickpeas in a dry kitchen towel and gently rub and massage them to get the skins off. You want them as dry as possible for the crunchiest chickpeas. Don’t worry if a few skins are still left on.
2. Spread out the chickpeas on a sheet pan and roast in oven for 15-20 minutes, shaking the pan every 10-15 minutes or so to avoid burning. Remove the pan from the oven and drizzle the oil on the chickpeas and sprinkle the spices over them. Using your hands mix everything together thoroughly to coat the chickpeas (let them cool a bit if they are too hot to handle)
3. Roast coated chickpeas for another 20-30 minutes, shaking the pan every 10-15 minutes or so. Turn off the oven, open the oven door, and let chickpeas cool in the oven for about 15 minutes. Cool and store in a breathable container.
