1. Preheat oven to 450 degrees F (230 degrees C). Place a sheet pan on the lowest oven rack to preheat.
2. Combine eggs, cinnamon, sugar, and salt. Whisk in cream, persimmon pulp, melted butter, and lemon juice. Pour into unbaked pie shell.
3. Bake for 10 minutes on preheated sheet pan. Reduce heat to 350 degrees F (175 degrees C), and bake an additional 30 minutes, or until center is almost set but still slightly jiggly. Cool completely before slicing. Serve with whipped cream, if desired.

1. Spray a 9-inch fluted tart pan with a removable bottom with cooking spray or lightly brush with melted coconut oil.
2. Pulse the pecans in a food processor until they are coarsely ground. Add the 2 teaspoons coconut oil, maple syrup, flax meal, nutmeg and salt. Process until the mixture comes together. Gather the dough and with your fingers press into and up the sides of the prepared pan.
3. Preheat the oven to 350°F. Bake about 10 minutes, just until a hint of golden color is around the edges. Cool.
4. When the tart is cool but not cold, carefully loosen the crust and remove the fluted rim. Transfer to a flat serving platter.

1. Extract the pulp from the hachiya persimmons: Wash them, cut them in half through the equator, and just scoop out the pulp with a spoon. You can puree the pulp in a blender or food processor - I like it a bit chunky so I just used a hand potato masher.
2. If you need to toast your nuts, start that process now as well as macerating the raisins if you plan to add this step. If you macerate the raisins - just add enough orange juice to immerse them and about a teaspoon of cinnamon - pour out most of the juice before you use them.
3. Butter or spray 2 loaf pans. Line the bottoms with a piece of parchment paper or dust with flour and tap out any excess. (I used one loaf pan and one 8 compartment mini-loaf pan).
4. Preheat oven to 350 degrees.
