When it comes to duplicating one of the most iconic beers in the world it is always going to be tough. Guinness Extra Stout has a simple recipe but is hard to replicate, especially when you are comparing to draught versions which are carbonated with a blend of nitrogen.
Add to stout when bottling or kegging. Guinness Draught, the kind found in widget cans or bottles, is an Irish dry stout. Guinness has a sharper roast character and more hop bitterness than Murphy’s. The key to making a great clone is using roasted unmalted barley (or black barley) with a color rating around 500 °L.
Guinness Draught clone. Pour diluted grain tea through grain bag. Heat liquid in brewpot to a boil, then stir in dried malt extract and hops and begin the 60 minute boil. With 15 minutes left in boil, turn off heat and stir in liquid malt extract. Stir well to dissolve extract, then resume heating.
These beers have substantial body and flavor from the use of dark malts and adjuncts. The classic Guinness has a starting gravity as low as 1.036 for the native version, and lowering it just down to 1.032 gives a beer with an estimated ABV of 3% and calorie count of around 104 calories for 12 oz (1/3 liter).
