Ratings: 15Total Time: 15 minsCuisine: AmericanCalories: 709 per serving1. If you have packaged ground beef and not patties, divide the beef into 4 portions. This will yield 4 1/4 pound burgers. You can also divide your beef patties into 3 1/3 pound patties, or 2 1/2 pound patties. However many burgers you decide to prepare, flatten the patties out to roughly 1 inch in thickness.
2. Heat your grill, cast-iron skillet, or frying pan to medium-high heat (the higher end, almost to high heat). Stovetop: Use a small amount of coconut oil or another cooking oil with a high smoke point to lightly coat your skillet or frying pan.
3. Season the tops of each Wagyu beef burger patty lightly with salt and pepper. Place the patties onto the grill or into your skillet or frying pan with the seasoned side facing downward. Season the reverse side that is now facing upward.

Total Time: 15 minsCategory: Main CourseCalories: 288 per serving1. Loosely shape beef into patties that are about 1/2 to 3/4 inches thick. Using two fingers, make a small indentation in the center. Lightly season with salt and pepper. Note: Don't handle the beef too much or it will become tough.
2. Heat a skillet over medium-high heat for a few minutes so the patties sizzles when they hit the pan. Don't spritz with oil first. Fat will ooze out of the burger as it cooks so it will not stick. Place each patty in the pan with the indented side on top. Cook for 3-4 minutes without touching so the bottom caramelizes and browns.
3. Use a spatula to flip each patty to the other side and cook to desired doneness (see chart in the notes below.)
4. If adding cheese, place it on the patties during the last minute or two of cooking. Cover the pan to quickly melt it.

Category: Main-DishAuthor: Twisted Root Burger CoDifficulty: Easy1. Heat oil in a skillet over medium-high heat. Add the onion and saute until golden brown and caramelized, 5 to 6 minutes. Add the thyme and mix well. Set aside on low heat until ready to serve.
2. Divide wagyu into 4 equal patties (see Cook's Note). Spread 1 tablespoon Dijon mustard on one side of each patty. Place the patties, mustard-side down, in a large skillet over medium-high heat. Sprinkle with salt and pepper to taste. Cook until the mustard sides of the patties have cooked through and become a caramel brown color, then flip the patties over and cook until the centers of the patties have reached the ideal temperature for diners' tastes, using an instant-read thermometer. (Without a thermometer, a patty that is firm to the touch in the center but not tough and has a thin line of pink through the middle is around medium-well.) Remember, you still have to melt the cheese on top, so you may want to cook a little under your normal preference at this stage, because it will continue to cook while the cheese melts.
3. Add 1 ounce (1/8 cup) sauteed onions to the top of each wagyu patty. Add 1 slice of Gruyere on top of each serving of onions. Cover the skillet for about 30 seconds to allow the steam to melt the cheese.
4. Butter brioche buns and lightly toast using a separate skillet, if desired. Place a patty on each brioche bun. Serve with lettuce and tomato on the side for garnish, along with desired condiments.
