1. Cook the ground beef until done and drain the grease. While the ground beef is cooking, steam the cauliflower rice in the microwave. VERY IMPORTANT: After the cauliflower has cooked, you must press out as much liquid as possible. Place the cooked cauliflower rice in a mesh strainer, then place several paper towels on top of the cauliflower and use your fist to press very firmly on the cauliflower rice. Repeat this process, switching out the wet paper towels with dry paper towels until there is no more liquid draining/dripping out of the strainer.
2. Combine the ground beef and cauliflower rice. Add the tomato sauce (use the tomato sauce with basil, garlic, and oregano for added flavor but check carb content), sour cream, and seasonings. Mix well. Check the flavor and add additional seasonings if desired.
3. Wash and dry bell peppers. Cut the tops off the bell peppers and remove the seeds and white membrane.
4. Fill the peppers with the ground beef mixture and place in a baking dish or muffin pan. SEE RECIPE NOTES BELOW FOR SOFTER BELL PEPPERS.

1. Preheat oven to 425 degrees F. Line a small baking sheet (I use 9 x 13) with aluminum foil. Wash peppers and slice off tops. Using small paring knife, remove membranes and seeds. Arrange peppers cut side up on prepared baking dish.
2. Heat olive oil in large skillet over medium heat for 1 minute. Add onions and sauté 3-5 minutes. Add minced garlic and continue cooking for 1 minute.
3. Increase heat to medium-high. Add ground beef and pork sausage. Cook until browned (8-10 minutes). Drain excess fat. Reduce heat; stir in marinara sauce and spices. Simmer until meat mixture is heated throughout (about 5 minutes). Remove from heat. Add 1 cup shredded Parmesan cheese and stir.
4. To assemble peppers, layer ¼ cup of meat mixture on bottom of each pepper. Next, spoon in approximately ½ tablespoon softened cream cheese, followed by 1 tablespoon shredded mozzarella cheese. (I use my fingers to approximate cheese amount). Repeat process for second layer: meat, cream cheese, mozzarella. After stuffing, brush the outside of peppers with olive oil and roast in oven at 425 degrees F for 20 minutes. Tent with aluminum foil the last few minutes if cheese over-browns.

1. Prepare the green bell peppers by cutting the tops off (save the tops) and removing all the seeds and membranes. Set the peppers open side up into the crock pot.
2. Put the remaining ingredients EXCEPT the chicken broth in a large bowl and mix, breaking up the ground beef and pork and making sure everything is combined well.
3. Fill the peppers with this mixture, then set the pepper 'tops' back on the peppers. The peppers should be over-flowing with the meat mixture, so the top will just teeter on the top of the mixture, it won't fit down all the way.
4. Pour the chicken broth into the slow cooker around the peppers.
