Green Lentil Soup Stewed in a rich broth, lentils add the wow factor to this delicious soup. Tender chunks of potato, carrot, and bell pepper are simmered with hearty lentils and flavored with cumin, turmeric, and paprika. It’s a great go-to soup for lazy weekends or big brunches.
Add onion and garlic, cook until golden brown (5 minutes), stirring occasionally. Add turmeric, coriander, curry powder, cumin and salt; cook for another 30 seconds, stirring frequently. Add coconut milk, tomato paste, water, lentils and stir to combine. Bring to a boil, cover and cook on low for 45 minutes.
Add oil to a large pot over medium heat. Once hot, add onions and sauté for about 3 minutes. Add minced garlic and sauté for another minute. Add celery, Italian seasoning, paprika, cumin, thyme, and cook for 1 minute. Add lentils, tomatoes, carrots, potatoes, and vegetable broth.
