1. Remove the stems and seeds from the fresh poblano and serrano(or jalapeño). Roughly chop the peppers. if you would like a more green masa, add another poblano. You will just have to add a little less broth when you mix the masa.
2. Heat oil in skillet to medium. Add the onions, garlic and jalapeños. Season lightly with salt and pepper. Saute for 5 minutes. Mix in the tomatoes, poblano strips and diced green Anaheim peppers. Taste for salt and pepper and continue cooking for another 5 minutes. Let cool completely.
3. Take one corn husk and shake off excess water. If the corn husk is wider than 5 inches, tear excess off from one side. It's just easier to spread masa this way.

1. Prep the corn husks: Add the corn husks to a large bowl or pot. Pour enough hot water over the corn husks to cover them completely. Cover the bowl with aluminum foil and let them soak for 1 hour to soften them up.
2. Roast the chiles: Spray a large baking sheet with nonstick cooking spray or grease with oil. Place the tomatillos, jalapenos, poblanos and serrano peppers on the baking sheet and place under broiler. Broil on high for 10 minutes, turning the tomatillos and peppers over halfway through.
3. Remove the skin: Remove the baking sheet from the broiler and cover with aluminum foil or plastic wrap. Let it sit for 10 minutes. Uncover and remove as much of the skin from the peppers and tomatillos as you can. At this point, you can also remove the seeds from any of the peppers if you don't want it too spicy.
4. Make the green chile sauce: Add the roasted tomatillos, all the peppers, onions, garlic, salt and water to a large blender. Blend until smooth. Set aside until ready to use.

1. Cover 40-45 corn husks with hot water, place a heavy pan on top to make sure all the husks stay covered. Let them soak for 45 minutes. If you are making your filling in advance, soak the corn husks the day you are making the tamales.
2. Place pork, bay leaves, pepper and 2 teaspoons salt in a pressure cooker, cover the meat with water and cook according to your pressure cooker's instruction manual (Note: Every pressure cooker is different, in mine it took 40 minutes). You can also use a slow cooker or a pot, but this will take longer. Whichever method you choose, in the end, you will need to have very tender pork meat and at least 3 cups of broth. When the meat is done, take it out of the broth and let it rest for a few minutes. Reserve the broth for later.
3. Mix tamal flour, salt and baking powder. Pour broth and mix until well integrated. Place the vegetable shortening in a big bowl and beat until creamy and fluffy. Add the tamal mixture and with you hands mix all ingredients for 5-7 minutes. The masa will be a little coarse, wet and spreadable.
