Although Revani is a semolina cake it is not to be confused with basbousa. Revani has eggs and flour and those two do not exist in classic basbousa recipe. Almost every pastry shop in Egypt makes this delicious cake.
As revani is popular throughout the eastern Mediterranean countries, you will find slightly different versions depending on the recipe's origin, such as the Turkish semolina cake in syrup that offers a subtle twist on this simple recipe.
Locals in southern Greece call it ravani, but in northern Greece it is known as revani, especially in the city of Veria, a Greek commune on the outskirts of central Macedonia. While all of the country makes this cake, Veria is the revani making capital of Greece. Verian revani was made famous by the Hochliourou brothers.
