1. Heat the olive oil in a large skillet and add the ground lamb. Once the meat is browned all over, drain any excess liquid. Season with garlic, dried oregano, salt and pepper.
2. While the lamb is cooking, cook the cauliflower rice using your preferred method (eg microwave steam packet, boiling).
3. When the cauliflower and lamb are ready, transfer them to a serving platter or large bowl. Sprinkle the crumbled feta cheese over the top, and add cucumber slices, black olives, and halved cherry tomatoes. A sprig of fresh mint or oregano makes a nice garnish!

1. Whisk together all of the marinade ingredinets. Add the chops to a large baggie and pour the marinade over top.
2. Seal the bag and use your hands to mix the marinade through the chops and then place in the refrigerator for 8 hours or overnight.
3. Take out the lamb chops when ready to eat and let them sit on the ccounter for 15 minutes. Place them on a plate and discard the marinade.
4. Grill the lamb chops for about 5-6 minutes per side. The time will depend on the size and thickness of the chops. Mine were about 1 - 1.5 inches thick and too 6 minutes on each side and came out medium rare.

2. Mix all of the ingredients together in a small jug or bowl.
3. Arrange lamb chops in a large baking dish or on a large plate, and pour the marinade all over the lamb, rubbing it into the meat. Cover with plastic wrap and marinate for half an hour, or for a deeper flavour, marinate overnight in the refrigerator, turning the chops from time to time (before cooking, let lamb chops sit at room temp 30 minutes).
4. Heat oil in a pan (cast iron preferably or grill plates) over high heat until just starting to smoke. Fry or grill lamb in 2 batches for 3-4 minutes each side, depending on thickness until done to your liking. (Usually, at 3 minutes per side they are medium, and at 4 minutes they are medium-well.)
