DirectionsStep1In a mixing bowl whisk together the eggs and cornstarch. Set aside.Step2In a cooking pot add milk, sugar, and vanilla extract. Heat over medium-high heat.Step3Once milk reaches a boiling point remove from heat. Using a ladle, start pouring milk slowly, into the egg mixture while whisking constantly.Step4Incorporate half the milk into the eggs and then transfer the mixture back to the pot.Step5Transfer pot back to the heat and keep whisking until cream thickens.Step6Set cream aside while you prepare the base.Step7Preheat oven to 200°C / 392°F.Step8Lay open the filo stack on your working surface.Step9Grease a 15x10 inch / 38x25 cm baking dish with melted butter.Step10Take one filo sheet and gather it up together (to make it look wavy) to the corner of the dish. Repeat process with 4 more filo sheets to cover the whole bottom of the dish.Step11Drizzle using the 1⁄3 of the melted butter.Step12Bake filo for 5 minutes or until it gets a golden color all over on top.Step13Remove from the oven and spread the cream evenly on top.Step14Add the remaining filo sheets exactly the same way as you did for the base. You may tear a filo sheet apart in order to fill empty spaces.Step15Drizzle remaining butter on top.Step16Bake for another 10-15 minutes, or until filo looks crispy and deep golden in color.Step17Set pastry aside for 10-15 minutes.Step18Dust with plenty of icing sugar and cinnamon.     1. Pre-heat the oven to 355F / 180C.
    2. Pour a kettle of boiling water over the spinach in a colander to wilt it, then squeeze out as much of the water as you can with the back of a spoon (and your hands!). Chop the spinach and put into a bowl.
    3. Add the sundried tomatoes, salad onions, feta (crumbled), parsley, dill and eggs to the spinach and combine well.
    4. Now prepare the pastry. Lightly brush or spray an 8" loose-bottomed baking pan with olive oil, then drape a sheet of filo pastry in the centre of it at an angle, with about half of it hanging over the edge. Repeat with the other 4 sheets of pastry, rotating the pan as you go so that the whole of the bottom of the pan and the sides are covered with pastry. Brush lightly with olive oil between each layer.
